Filipino Disco with MAMA Z and Tarsier Spirit @ Headspace

Despite the rainy weather, Summer is officially here. We celebrated with a Filipino themed party complete with a streetfood feast, bespoke cocktails, banana leaves and fruit punch.

The streetfood scene in Manchester is currently booming, and we’re incredibly lucky to be centrally located within such a diverse city. At Headspace, we love to share international flavours and experiences with our community. We believe this inspires creativity and new perspectives, and has the bonus of opening up new opportunities. Our party was also the perfect kick off for the upcoming Manchester International Festival launching in neighbouring Albert Square this month.

We wanted to create something special to celebrate the community here at Headspace, and what better time than the onset of summer. Headspace Reception was transformed into a tropical paradise, complete with a gin bar provided by Tarsier to the right, and mountains of food prepared by Mama Z to the left. The food was laid out on banana leaves in the style of a ‘Boodle Fight’; the traditional way of eating Filipino food socially. Although no one used their hands as is custom, we stayed as authentic as possible while maintaining those good old health and safety standards.

All of this was accompanied by a bangin’ playlist and of course, plenty of partygoers with full glasses. Cheers!

Introducing MAMA Z

Special guest MAMA Z brought the sauce with an exquisite Filipino feast. MAMA Z AKA Zosima Fulwell is a self-taught cook, who has been serving up Filipino flavours to the Manchester Community for 2 years now. Half Filipino and brought up in Saudi Arabia and Lancashire, she is a certified ‘Third Culture Kid‘, and has had pop-ups at Grub, a 3 month residency at Hatch and currently has a regular stall at Station Hop in Levenshulme. Expect a fusion of influence and captivating flavours.

Try not to drool at this menu of Pandan Chicken Skewers, Mushroom Longganisa Rolls, Chicken Lumpia, Chicken Adobo, Ginataang, Asian Slaw and Spiced Carrot Cake:

The Vegan Spiced Carrot Cake was the surprise hit of the evening; deliciously sticky and gooey, topped with a tangy coconut and lime frosting.

The Fili feast was paired with a bespoke gin cocktail courtesy of mixologist Sherwin, co-founder of Tarsier Spirit. Inspired by the cuisine of Southeast Asia, Tarsier is a citrus forward gin with aromatic & savoury mid-notes and a long peppery finish. This made Tarsier the perfect accompaniment to the sweet, sour and spicy flavours MAMA Z brought to the spread.

So how did it start? Co-founders Sherwin and Tim went backpacking five years ago and realised that there was a gap in the market for a Southeast Asian gin. This was astonishing to the pair, especially how big the craft gin market has become along with the popularity of Southeast Asian cuisine. They decided to name their gin after the Philippine Tarsier, one of the world’s smallest primates that is native to the Philippines. Characterised by its small stature and big eyes, it perfectly embodied their vision; a small batch gin with big flavour and personality.

Tim and Sherwin have therefore partnered with the Philippine Tarsier Foundation, a Tarsier conservation project in Southeast Asia. 10% of all profits from the gin go to helping preserve the Tarsier in its natural environment.
